We're loving Pimm's ice lollies

The simplest, summery ice lollies you can make - and they're made with Pimm's!

*Serves 12

 

Ingredients

300ml Pimm's, chilled

850ml diet lemonade, chilled

1 orange, zested

300g strawberries, cut in half

¼ cucumber, sliced

2 sprigs mint, leaves picked

 

Method

In a large jug, mix the Pimm's, lemonade and orange zest together.

Divide the strawberries, cucumber and mint between 10-12 lolly moulds.

Pour over the Pimm's mix, insert the lolly stick and freeze for 2-3 hours or until frozen solid.

When you’re ready to serve the lollies, dip the mould in a bowl of hot water for 2 seconds and gently slide the lolly out.
